1.Find a picture you want to use I decided to go with this one

2.Now duplicate image and change it to grayscale
3.Now Copy image and paste it over the original color picture
4.Now select your eraser and carefully erase the part of the image you want to show color
When your done it should look something like this

Another way to convert a layer to grayscale without converting the entire image is to perform a "Filters->Colors->Channel Mixer", check the "monochrome" option, and use the following settings:

R=0.30
G=0.59
B=0.11

I recommend then saving the settings to a file for later use. Press OK, and your layer is converted to "grayscale" in the same way as the "Image->Mode->Grayscale" works.

Also, the next version (2.4) of the GIMP will have added the ability to choose between the original ("average"), the "grayscale", and the "Value" (as in HSV) algorithms when you perform a "Layer->Colors->Desaturate".
