Gmic was born with the main idea to easy creations of custom filter, even if is now more know for the filters already included
About the question why use gmic and not scheme or pyton...well a cool preview, flexible option for I/O may be good reasons
another may be that scripts for the gmic plugin are almost identical to that for gmic command line...and so not hard to adapt to batch work
Zonderr (from GMIC flickr group )wrote a tut , addressed also to people with no coding background, where he explains in a very clear way how to create new filters and/or combine already available filters in new one
